Chef Timothy Hollingsworth Returns To Yountville

Foregoing traditional culinary school, Chef Timothy Hollingsworth honed his craft by working with some of the best chefs in the industry. He spent 13 years under the tutelage of Chef Thomas Keller at The French Laundry in Yountville, making his way from commis to sous chef in just four years, eventually becoming the Chef de Cuisine. He also traveled the world with chefs like Gordon Ramsay and Alain Senderens.

"I'm happy I didn't go to culinary school, I'm happy I didn't have the debt from going to culinary school, but the one thing I wish I would have done was gone to business school," Hollingsworth reflected. "I think that would have been helpful 'cause that part of the restaurant now, is a lot of what I do. Ultimately, if I had gone to school for that, I would be a lot more prepared now." - via Peter Pham, Food Beast

He has multiple awards under his belt, including both the 2010 James Beard Foundation's Rising Chef of the Year Award and the San Francisco Chronicle Rising Star Chef.

In 2015 he opened his first restaurant, Otium, in the greater Los Angeles area, where he now resides with his wife, two kids and dog.  

“The restaurant’s name, Otium, has its roots in Latin, a word that is meant to emphasize a place where time can be spent on leisurely social activities.”

Following the success of Otium, he expanded his footprint in Los Angeles when he opened C.J. Boyd’s, a fried chicken stand, as well as Free Play, a restaurant and bar.

“C.J. Boyd’s fried chicken is an homage to Chef Tim Hollingsworth’s grandfather, Cecil Boyd, his southern roots and his love for fried chicken. Tim’s sandwiches include elevated, modern twists inspired by his culinary pedigree.”

Chef Hollingsworth recently competed on Netflix’s The Final Table with other top chefs from around the world. No surprise here … Hollingsworth won first place!
